Sun Dried Tomato Cream Sauce

1/4 lb. butter
l large onion
3 tbsp fresh chopped parsley
4 oz. Cerignola sun dried tomatoes cut into small pieces
1/2 pint half & half
1/2 cup Santisi Extra Virgin Olive Oil
3 tbsp fresh basil
1-1/2 pint heavy cream
1 small can tomato paste
pepper
1 lb.Vicidomini pasta

 

Soak sun dried tomatoes in hot water for 30 minutes, drain.

 

In large frying pan melt butter with olive oil, add chopped onion & cook until softened.  Add garlic, stir until garlic starts to color, add basil & parsley stir a few more times then add sun dried tomatoes.  Simmer a few minutes (do not overcook), add heavy cream & half & half.  Cook over low heat until blended, do not boil.  Add tomato paste, heat until smooth & blended, add pepper to taste & toss immediately with pasta.  Top with grated cheese.
